評分levain bread大集閤,做法都是標準的artisan baking,非常地道,總體由簡到難(高比重白麵粉->高比重全麥粉),含水量相當高,技術難度相應也高,初學者並不適閤。 tartine的一大特點是young levain,短一發+長二發,和其他書裏略有不同,此外江浙滬地區鼕季室溫建議不要照著方子做,實在太費時,改良方法是添加少量的instant yeast。
